Ingredients

  • 200g shrimp paste (store-bought or homemade)
  • 30g carrot (peeled, finely diced, blanched 1 min, drained)
  • 30g corn kernels (fresh or thawed from frozen, drained)
  • 15g scallions (green part only, finely chopped)
  • 1/4 tsp sea salt (adjust to taste)
  • 1/4 tsp black pepper (freshly ground)
  • 6 slices bacon (preferably thick-cut)
  • 12 slices cheese (mozzarella or cheddar recommended)
  • Parsley, a little (optional garnish, can substitute scallions)
  • Chili powder, a little (optional, to taste)

Instructions

  1. Prepare the Seasoned Shrimp Paste

In a large bowl, combine 200g shrimp paste with carrot, corn, and scallions.

Season with 1/4 tsp sea salt and 1/4 tsp black pepper. Mix thoroughly until well combined. Set aside.Prepare the Seasoned Shrimp Paste

  1. Assemble the Rolls

Lay bacon slices flat on a board. Cut into 10–12 cm lengths if too long.

  1. Cook the Rolls (Two Methods)

Method A: Oven-Baked (Recommended)

Preheat oven to 150°C (300°F) for 5 minutes.

Bake for 18–20 minutes until bacon is crispy, shrimp cooked, and cheese melted.

Method B: Pan-Fried

Heat a nonstick pan over low heat (no oil needed, bacon will render fat).

Place rolls in pan, gently turning with tongs. Cook each side 3–4 minutes until golden brown and shrimp is cooked (12–15 minutes total). Cook in batches if needed.
